Hash Brown Casserole Recipe

Looking for a new and easy side dish?

If you like potatoes, you might just like this hash brown casserole I made last week. This is something that is easy to make and also provides you with quite a bit of servings. If you are having a superbowl party, this might be a great idea!

Hash Brown Casserole Recipe

  • 24 to 32 oz bag of hash browns
  • 10 3/4 oz can of cream of chicken soup
  • 10 3/4 oz can of cream of potato
  • 16 oz sour cream
  • 2 cups shredded cheddar cheese


  1. Spray 11x7 dish with cooking spray
  2. In a bowl add all of the ingredients and mix
  3. Pour in dish, do not smooth out, just move mixture around until bottom is covered with mixture
  4. Bake at 350 degrees for 1 hour
  5. Remove from oven, cool and enjoy!


Cheesy Tater Tot Chicken Casserole Recipe

Last week I was browsing the Betty Crocker website in search for new recipes to cook. I found one that I thought my whole family would eat (especially my husband). This meal was a hit with no leftovers and I didn’t even get to take my own picture. Below is my version of Cheesy Tater Tot Chicken Casserole.


  • Tater Tots – Around 4 cups
  • 1 bag (24 oz) Green Giant® frozen broccoli, carrots, cauliflower and cheese-flavored sauce
  • 1 can Campbells Cheddar Cheese
  • 1 cup shredded sheese
  • 2 cups cooked chicken breast – cut in small pieces


  1. Place the package of Green Giant vegetables in a casserole dish (11×7) and cook 3 to 5 minutes to melt the cheese sauce. Be sure to stir at least once in between cooking.
  2. Add chicken, can of cheddar cheese and stir.
  3. Top chicken mixture with tater tots
  4. Bake at 375 degrees for 45 minutes. Remove and top tater tots with shredded cheese. Cook an additional 5 minutes to allow cheese to melt.

Cowboy Casserole Recipe

The other day, I got my first issue of my Taste Of Home subscription. Let me tell you that I LOVE this magazine. I used to have a subscription years ago, and now I am back. Today I prepared one of the recipes in this month’s issue called Cowboy Casserole. This is easy to make and my whole family enjoyed it. Even my picky eater who doesn’t really like corn ate it!


  • 1lb ground beef (thawed)
  • 1 can whole kernel corn
  • 1 can condensed cream of chicken (undiluted)
  • 1 cup shredded cheese
  • 1/3 cup milk
  • 2 TBS sour cream
  • 3/4 tsp onion powder
  • 1/4 tsp pepper
  • 32 oz bag of tater tots


  1. In a skillet, cook ground beef over medium heat until it is no longer pink and drain. Add the corn, soup, 1/2 cup cheese, milk, sour cream, onion powder and pepper.
  2. In the bottom of  a baking dish, arrange half of the bag of tater tots. Make sure that you spray your baking dish with cooking spray if it is not a non-stick dish. Layer beef mixture over tater tots. Add remaining tater tots to top of beef mixture and sprinkle remaining cheese over the top.
  3. Bake at 375 degrees for 25-30 minutes until cheese is melted and bubbly.
  4. Enjoy!
