How To Make Lemon Zucchini Bread

One type of food that I just LOVE is bread. I like it sour as in sourdough bread but I also love it sweet. One of my favorite breads to make at home is lemon zucchini bread. I love that lemon and zucchini combo!

Here is the recipe for lemon zucchini bread that I use:

Lemon Zucchini Bread

Course Bread

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 coconut oil
  • 1/2 cup granulated sugar
  • 1/2 cup low fat buttermilk
  • 2 tbs lemon juice
  • zest from 1 lemon
  • 1 cup finely grated zucchini
  • 1 cup powdered sugar for glaze
  • 1 tbs lemon juice for glaze
  • 1 tbs milk for glaze

Instructions

  1. In a large bowl add the flour, baking powder and salt. Use a whisk to blend ingredients and set aside.
  2. In a medium bowl add the eggs, coconut oil and sugar. Mix well. Next add the buttermilk, lemon juice, lemon zest. Fold in the grated zucchini until it is evenly distributed in mixture.
  3. Add wet mixture to dry mixture and stir until you see no dry ingredients. Pour batter into non-stick 9x5 loaf pan. Cook at 350° for 40-45 minutes or until toothpick inserted into center of loaf comes out clean.
  4. Remove from oven and place on wire wrack to cool. While bread is cooling, you can make glaze. Add powdered sugar, milk and lemon juice in small bowl. Spoon glaze over cooled loaf and let glaze set.
  5. Cut and enjoy!

I used coconut oil in my recipe. You can choose another oil like vegetable oil but I like to use coconut oil when I am baking sweets.

Make sure you use the lemon zest in the recipe. It gives the bread so much more flavor!

I love making this bread because I put this grated zucchini in my mixture and my family never knows. This is a really great way to hide your kid’s veggies!

Homemade Biscuits

One thing that gets made for breakfast quite often in my home is biscuits and gravy. I love eating those two things combined and so does everyone else in my family. I will admit that I cheat most times and use the pre-made biscuits you can buy at the store. Those are the mornings when I am lazy and don’t feel like making breakfast from scratch.

On the mornings or even evenings when I am in the baking mood, I will make up a batch of my homemade biscuits along with some gravy and make everyone smile. The recipe is very easy, especially for those with a stand mixer!

Homemade Biscuits Recipe

Ingredients

  • 4 cups all-purpose flour
  • 2 TBS baking powder
  • 2 TSP salt
  • 2 TBS sugar
  • 2/3 cup shortening
  • 1 1/2 cup milk

Instructions

  1. In a mixing bowl add the flour, baking powder, salt and sugar. Use the whisk attachment and mix for 1 minute.
  2. Slowly cut in shortening and mix until mixture resembles coarse meal. Gradually add the milk into mixture until dough pulls away from bowl. If dough has a "wet" consistency add a pinch of flour until you reach desired texture.
  3. On a floured surface, pat or roll dough until it is about 1" thick. Use a glass to cut biscuits until all dough is used.
  4. Place biscuits on ungreased cooking sheet. Bake at 425° for 12 to 14 minutes. Biscuits should be lightly golden when done.
  5. Remove from oven, cool and enjoy!
  6. Makes about 12-15 biscuits.

 

As for the gravy, I either make my own using bacon grease drippings or cheat and use a package. The country gravy packages from Walmart are pretty good and only $.49 cents!


Streusel Topped Blueberry Muffins Recipe

One of my favorite types of muffins would have to be blueberry. In my pastry/baking class we made some delicious blueberry muffins that I plan on making again. I am posting the recipe below but you are going to need a food scale in order to weigh the ingredients!

Streusel Topped Blueberry Muffins Recipe

Ingredients

  • 8 1/2 oz Pastry flour
  • 2 tsp Baking powder
  • 3/4 tsp Salt
  • 6 oz Sugar
  • 2 oz Vegetable oil
  • 1 1/2 oz Melted butter
  • 3 oz Eggs
  • 5 oz Milk
  • 4 oz Blueberries

Instructions

  1. Combine and sift together the dry ingredients.
  2. Whisk together oil and melted butter, then whisk into remaining liquid ingredients. Whisk to break up the eggs.
  3. Using a rubber spatula, fold together liquid into dry.
  4. Add berries when the batter is mixed halfway. Do not over mix. Batter should be rough and lumpy, not smooth.
  5. Spray 12 standard-size muffin tins with non-stick spray or line with muffin papers.
  6. Using a #16 scoop, scoop the batter from along the sides of the bowl, being careful not to stir the batter. Deposit 2 ½ oz. batter into standard muffin tins. Muffin tins should be about 2/3 full.
  7. Top with streusel if desired. (optional)
  8. Bake at 350° for 15 to 20 minutes.

If you want to add streusel to the top of your blueberry muffins, here are the ingredients:

  • ½ cup all-purpose flour
  • ¼ cup brown sugar, packed
  • ½ stick unsalted butter
  • ½ tsp ground cinnamon

You simply combine these ingredients with a pastry blender or fork to make it crumbly!

Slow Cooker Monkey Bread

A few years ago I bought some pre-packaged monkey bread in the freezer isle. It was something that the kids liked and they thought the name of the bread was pretty funny. After trying the frozen monkey bread, I thought the concept was pretty cool and made some Pizza Monkey Bread. This was another monkey bread that my kids really liked.

Since it has been too hot to use the oven, I recently made some monkey bread in my slow cooker (crockpot) that was yet another hit. This is a recipe that only has a few ingredients and is super EASY to make.

Slow Cooker Monkey Bread Recipe

Ingredients

  • 1 can of Pillsbury Biscuits
  • 1 cup brown sugar
  • 1/3 cup butter melted
  • 1 tsp cinnamon

Instructions

  1. Cut each biscuit into 4 pieces.
  2. In a bowl add brown sugar and cinnamon.
  3. Dip each piece of biscuit into butter, then roll in sugar mixture.
  4. Add pieces of biscuits into your slow cooker in layers.
  5. Pour remaining sugar mixture over top of biscuits.
  6. Turn slow cooker on low and cook for about 2 to 2 1/2 hours.
  7. Enjoy!
