Tofu Berry Pop

One thing that my kids enjoy when it is hot outside is a nice cold popsicle. Although they might taste good, most of the popsicles that I buy at the store are full of high fructose corn syrup, artificial colors and flavors. When you make your own popsicles at home, you can make them healthy.

Below is a recipe for Tofu and Berry Popsicles from House Foods.

Tofu and Berry Popsicle Recipe

Author Debi Mazar & Gabriele Corcos, stars of Cooking Channel’s show Extra Virgin

Ingredients

  • 1/2 package 7 oz House Foods Tofu Soft
  • 2 cups strawberries or other berries hulled and sliced
  • 1/2 cup super fine sugar
  • 1 1/2 teaspoons pure vanilla extract

Instructions

  1. Add the berries to a bowl and toss with the sugar and the vanilla. Let sit out for 20 minutes so they become juicy.
  2. Add fruit mixture to a blender or food processor and puree until smooth. Add the tofu and blend again until incorporated.
  3. Divide the mixture into 4 popsicles molds. Freeze until firm, for about 4 hours.
