Patriotic cupcakes

I LOVE holidays because they give me an excuse to make cupcakes. Today I made some “patriotic” themed cupcakes to have for our little BBQ tomorrow for the Fourth Of July.

I made quite a few of the cupcakes pictured above, but ran out of the blue and red frosting I used to made some basic cupcakes using white frosting and some red and blue sprinkles.

Basic Patriotic Cupcakes

For these cupcakes, I made the actually cupcakes from scratch but used store bought frosting. I bought a tub of white frosting and bought the a blue and red tube of the Wilton Decorating Icing tubes so that I could add my decorating attachment to make decorating easier.

For those looking for an easy and basic cupcake recipe, here is my cupcake recipe I used:

Patriotic Cupcakes + Recipe

Ingredients

  • 1 3/4 cup cake flour
  • 2 tsp baking powder
  • 1 cup sugar
  • 1/8 tsp cream of tartar
  • 2 eggs
  • 1/3 cup unsalted butter - room temperature
  • 1/3 cup coconut oil
  • 1 tbs lemon extract optional
  • 1 tsp vanilla
  • 1 cup milk
  • 25-30 drops of red food coloring

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl add dry ingredients and stir.
  3. In another bowl add remaining ingredients and stir.
  4. Add wet mixture to dry mixture and mix well.
  5. Add liners to muffin tin. Pour cupcake batter into liners about 2/3 full. You do not want to fill liners or you will have a mess.
  6. Place in oven and bake for 18-20 minutes or until toothpick comes out clean.
