Lemon Blueberry Crockpot Cake

Last month, since I love my slow cooker so much the hubby got me one of those cool triple buffet slow cooker systems. The slow cookers are only 1.5 quart, but will comes in handy for when I want to experiment and make different desserts. My first dessert I came up with for my mini slow cooker is some lemon blueberry cake. I got the idea from a recipe book and thought I would come up with my own version.

If you have a little crockpot too, here is a yummy recipe to spoil your tastebuds.

Mini Crockpot Lemon Blueberry Cake Recipe

Course Dessert

Ingredients

  • 3/4 cup all-purpose flour
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp lemon extract juice
  • 1/4 cup milk
  • 1 cup blueberries
  • whipped cream - optional

Instructions

  1. Add all ingredients to mini slow cooker and mix to blend.
  2. Cook on low for 4-6 hours.
  3. Spoon into a bowl and top with some cold whipped cream!

    Hi! This recipe looks amazing..I can’t wait to try it; however, I have a question. When you say 1 tsp of lemon…do you mean lemon juice? Lemon zest? or an actual lemon?

    Thanks for sharing this recipe. I like the fact that you cook it in the slow cooker. If you time it right it can be hot and ready after dinner is served.
