Cheesy Spicy Chicken Melt Recipe

The last few months I have been preparing dishes for my family that include both the VELVEETA® cheese and Ro*Tel® diced tomatoes. I love both of these products and it has been fun making delicious meals for my family that contain both products. This month I have made a Cheesy Chicken Melt.

Cheesy Chicken Melt Recipe

Ingredients

  • 16 oz VELVEETA® cheese - cut in cubes
  • 1 10 oz can Ro*Tel® Diced Tomatoes with Green Chilies
  • 1 10 oz can Enchilada sauce
  • 1 can refrigerated crescent rolls
  • 2 lbs chicken breast - cooked and shredded

Instructions

  1. In a skillet add chicken, Ro*Tel tomatoes, 3/4 can of enchilada sauce and VELVEETA cheese.
  2. Cook on medium heat for 5 minutes or until cheese starts to melt.
  3. In a 11x7 dish, add chicken mixture and spread evenly.
  4. Remove crescent rolls from package and unroll. Place each roll (flat) on top of chicken mixture.
  5. Top dish with remaining enchilada sauce.
  6. Cook at 375 degrees for 18 to 25 minutes or until top is golden brown.
  7. Remove, cool and enjoy!
