Cheesy Chicken Rotini Recipe

There are two things that get consumed at my house, maybe too often. Those two things would happen to be chicken and pasta. When it comes to making dinner, there will be many of times where you will find some sort of chicken dish and of course some sort of pasta.

The last few months I have been making some delicious dishes for my family that include both VELVEETA® cheese and Ro*Tel® tomatoes. This week I made a dish for dinner that included those two items that was a hit. If you like food that is a little spicy, this might be something you want to try.

Not only is this something that the whole family enjoyed, it is also super easy to make. In less than 10 minutes, you can have a hot and delicious meal that will have you wanting seconds. Below is the recipe for this Cheesy Chicken Rotini.

Cheesy Chicken Rotini Recipe

Ingredients

  • 1-1/2 lb. boneless skinless chicken breasts cut into 1-inch pieces
  • 2 cups water
  • 3 cups rotini pasta uncooked
  • 1 pkg. 16 oz. frozen broccoli, cauliflower and carrot blend
  • 1 can 10 oz. RO*TEL® Diced Tomatoes & Green Chilies, undrained
  • 1/2 lb. 8 oz. VELVEEA®, cut into 1/2-inch cubes

Instructions

  1. COOK and stir chicken in large skillet sprayed with Pam® cooking spray on medium-high heat 5 minutes or until no longer pink.
  2. STIR in water. Bring to boil. Add pasta; stir. Cover; simmer on medium-low heat 10 minutes or until pasta is tender.
  3. ADD remaining ingredients; stir. Cook, covered, 5 to 7 minutes or until VELVEETA® is completely melted and vegetables are crisp-tender, stirring frequently.
