In a large blender or food processor, add coconut oil, dates, cashew butter, blueberries, coconut flour, maple syrup, almond milk, vanilla extract, and sea salt. Blend until uniform and creamy.
Gently fold in chopped Blueberry Coconut Pistachio Chewy Bites.
Transfer mixture to a greased 8 x 8 square dish. Top with coconut and blueberries if desired, and freeze for 2 hours to overnight.
Let thaw for 5 minutes before serving, then slice into squares and serve.
