Avocado Bacon Pasta Salad

Ingredients

  • 8 oz Fusilli or Rotini pasta
  • 1 cup Cherry tomatoes diced
  • 6 pieces of crispy bacon crumbled
  • 2.25 oz can chopped olives
  • 2 avocados
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • lime juice
  • salt & pepper

Instructions

  1. In a blender add 1 avocado, 1 tbs lime juice, cumin, garlic powder, heavy cream, milk and salt and pepper to taste. Blend unto smooth.
  2. Cook pasta according to directions. Once done drain pasta and run water over it to make the pasta cold.
  3. Combine pasta and dressing in a bowl and lightly toss to mix.
  4. For best results keep pasta in refrigerator for at least 1 hour before serving.
