Cheesy Chicken Quesadilla Recipe

On Tuesdays I normally make Tacos. I know it isn’t much of a tradition, but we have our weekly Taco Tuesday night that is followed by ice cream for dessert. Last night I put a little twist on dinner. Instead of Tacos, I made some YUMMY Cheesy Chicken Quesadilla’s that feature both the VELVEETA® and RO*TEL® products. If you have been following along, the last 5 months I have been making a recipe each month that include those two products. Even though my campaign is coming to an end, I will still be using the VELVEETA® and RO*TEL® products in my recipes that I love making for my family.

Cheesy Chicken Quesadilla Recipe

Ingredients
  • 1 pound chicken – boiled & shredded
  • 12 oz VELVEETA® cheese – cubed
  • ½ cup Pepperjack cheese – shredded
  • 1 can RO*TEL® Diced Tomatoes & Green Chilies
  • 12 tortillas – soft taco size

Instructions
  1. Using a quesadilla maker, place a tortilla on burner and add chicken, cheeses and tomatoes. Add filling to center and leave at least 1″ around ends because the cheese melts and will run.
  2. Cook for 2-3 minutes until quesadilla is golden brown and edges are sealed. Remove and cut.
  3. If you don’t have a quesadilla maker, put filling on one half on tortilla and fold over. Then cook on skillet over medium heat on each side for about 2 minutes.
  4. Serve with sour cream or guacamole!

Stuffed Shells With Ricotta Cheese Recipe

When it comes to Italian dishes, besides spaghetti and lasagna and LOVE me some stuffed shells. I remember years ago buying them frozen in bulk and heating them up individually when I had the craving for one. Now I made a big dish of them, they are that good.

Stuffed Shells With Ricotta Cheese Recipe

Ingredients
  • 1 pound lean ground beef
  • ½ tsp seasoning salt
  • 16oz marina sauce
  • 12oz Ricotta cheese
  • ¼ cup Parmesan cheese
  • 3 cups Mozzarella cheese
  • 1 egg
  • 1 box Jumbo shells (12oz)

Instructions
  1. In a skillet add ground beef and seasoning. Cook until no longer pink and drain. While cooking meat, cook jumbo shells according to package and set aside.
  2. Add 1 cup of the marinara sauce to skillet and cook on medium heat for about 2 minutes to heat up and create a thick meat/sauce mixture.
  3. Add ½ cup marinara sauce to 13×9 baking dish and spread evenly.
  4. In a medium bowl, add egg, Ricotta cheese, Parmesan cheese and 2 cups of the Mozzarella cheese. Stir until blended.
  5. Add a spoonful of meat mixture into each shell along with about 1 TBS of cheese mixture. Fill each shell until mixture is gone.
  6. Pour remaining marinara sauce over shells and top with the leftover 1 cup of Mozzarella cheese.
  7. Cover with foil and bake at 375 degrees for 30 to 35 minutes until cheese is melted.
  8. Remove from oven and enjoy!

These are also great to bake when you are making lasagna since they have most of the same ingredients!

Cheesy Chicken Rotini Recipe

There are two things that get consumed at my house, maybe too often. Those two things would happen to be chicken and pasta. When it comes to making dinner, there will be many of times where you will find some sort of chicken dish and of course some sort of pasta.

The last few months I have been making some delicious dishes for my family that include both VELVEETA® cheese and Ro*Tel® tomatoes. This week I made a dish for dinner that included those two items that was a hit. If you like food that is a little spicy, this might be something you want to try.

Not only is this something that the whole family enjoyed, it is also super easy to make. In less than 10 minutes, you can have a hot and delicious meal that will have you wanting seconds. Below is the recipe for this Cheesy Chicken Rotini.

Ingredients
  • 1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 cups water
  • 3 cups rotini pasta, uncooked
  • 1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend
  • 1 can (10 oz.) RO*TEL® Diced Tomatoes & Green Chilies, undrained
  • ½ lb. (8 oz.) VELVEEA®, cut into ½-inch cubes

Instructions
  1. COOK and stir chicken in large skillet sprayed with Pam® cooking spray on medium-high heat 5 minutes or until no longer pink.
  2. STIR in water. Bring to boil. Add pasta; stir. Cover; simmer on medium-low heat 10 minutes or until pasta is tender.
  3. ADD remaining ingredients; stir. Cook, covered, 5 to 7 minutes or until VELVEETA® is completely melted and vegetables are crisp-tender, stirring frequently.

Hash Brown Casserole Recipe

Looking for a new and easy side dish?

If you like potatoes, you might just like this hash brown casserole I made last week. This is something that is easy to make and also provides you with quite a bit of servings. If you are having a superbowl party, this might be a great idea!

Hash Brown Casserole Recipe

Ingredients
  • 24 to 32oz bag of hash browns
  • 10¾oz can of cream of chicken soup
  • 10¾oz can of cream of potato
  • 16oz sour cream
  • 2 cups shredded cheddar cheese

Instructions
  1. Spray 11×7 dish with cooking spray
  2. In a bowl add all of the ingredients and mix
  3. Pour in dish, do not smooth out, just move mixture around until bottom is covered with mixture
  4. Bake at 350 degrees for 1 hour
  5. Remove from oven, cool and enjoy!

 

Cheesy Spicy Chicken Melt Recipe

The last few months I have been preparing dishes for my family that include both the VELVEETA® cheese and Ro*Tel® diced tomatoes. I love both of these products and it has been fun making delicious meals for my family that contain both products. This month I have made a Cheesy Chicken Melt.

Ingredients
  • 16oz VELVEETA® cheese – cut in cubes
  • 1 10oz can Ro*Tel® Diced Tomatoes with Green Chilies
  • 1 10oz can Enchilada sauce
  • 1 can refrigerated crescent rolls
  • 2 lbs chicken breast – cooked and shredded

Instructions
  1. In a skillet add chicken, Ro*Tel tomatoes, ¾ can of enchilada sauce and VELVEETA cheese.
  2. Cook on medium heat for 5 minutes or until cheese starts to melt.
  3. In a 11×7 dish, add chicken mixture and spread evenly.
  4. Remove crescent rolls from package and unroll. Place each roll (flat) on top of chicken mixture.
  5. Top dish with remaining enchilada sauce.
  6. Cook at 375 degrees for 18 to 25 minutes or until top is golden brown.
  7. Remove, cool and enjoy!
