Snickerdoodle Muffins Recipe

I have been making Snickerdoodle cookies for years! Today I made Snickerdoodle muffins and boy were they YUMMY…. I can’t wait to make these again. I thought I would share the recipe with you too!

Recipe: Snickerdoodle Muffins

Ingredients

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1 tsp sea salt
  • 1/2 cup sugar
  • 3/4 cup oats
  • 1 tsp vanilla
  • 1 egg
  • 4 tbsp butter (softened)
  • 1/4 tps nutmeg
  • 1/2 tsp cream of tartar
  • 1 tsp cinnamon
  • 1 cup milk

Instructions

  1. Mix dry ingredients
  2. Mix egg, butter, vanilla and milk and then combine with dry mix.
  3. Fill 2/3 cup in each muffin tin. Bake at 400 for 12 to 14 minutes
  4. Optional – Once out of oven, brush top with melted butter and sprinkle with cinnamon/sugar mixture.

Gingerbread Recipe

The other day I decided to make some homemade gingerbread. Last weekend we made a Gingerbread house (from a box) last weekend for the school’s Christmas Breakfast, I had wanted to make some bread that would taste great while making my home smell yummy too!

Below is an easy recipe for Gingerbread….

Ingredients:

  • 2 1/2 cups flour
  • 1 tsp cocoa
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp allspice
  • 1 tsp ginger
  • 1/2 cup sugar
  • 1 cup milk
  • 1/2 cup molasses (full flavor)
  • 1/2 cup butter

Directions:

  1. In a large bowl mix all of the dry ingredients (except the sugar).
  2. In a saucepan, add milk, sugar, butter and molasses on medium/low heat until warm and blended stirring frequently. Cool for about 5 minutes and added to bowl of dry ingredients. Stir until well blended and pour into greased loaf pan.
  3. Cook at 350 degrees for 35 minutes. Your gingerbread will be done when toothpick comes out clean.

Raspberry Chocolate Chip Cream Cheese Muffin Recipe

Today I made some of the BEST muffins that I have ever made. Normally I keep things pretty simple and basic. Today, these muffins go a little gourmet! I can’t take credit for this YUMMY recipe though, I adapted this recipe from NancyCreative.

Ingredients for batter:

  • 1 cup fresh raspberries
  • 1/3 cup semi chocolate mini chocolate chips
  • 1/4 cup chopped walnuts
  • 1 package (8 ounces) of regular cream cheese softened
  • 5 TBS butter softened
  • 1 1/2 cups sugar
  • 2 TSP vanilla extract
  • 1/2 cup milk
  • 2 large eggs
  • 2 cups unbleached all-purpose flour
  • 1 TSP baking powder
  • 1/4 TSP baking soda
  • 1/2 TSP salt

Ingredients for glaze:

  • 1 cup powered sugar
  • 2 TBS milk

Directions:

  1. In a medium or large bowl, mix cream cheese and butter until well blended. Make sure that the butter and cream cheese are softened for best results. Add sugar and stir until mixture is fluffy. Add the vanilla extract, eggs and mix well.
  2. In a different bowl, combine the flour, baking powder, baking soda and salt. Add this mixture to other bowl and blend well.
  3. Add milk, then slowly add the raspberries, chocolate chips and nuts.
  4. Pour batter into paper lined muffin tins about 3/4 full.
  5. Bake at 350 degrees for 25 minutes (or until center of muffin comes out clean when toothpick is inserted. Remove muffins from tin and let cool completely.
  6. Drizzle glaze on top of each muffin
  7. Enjoy!

Banana Nut Bread Recipe

When it comes to breads, I LOVE banana nut bread. I don’t know why I have never made my own until the other day. Now that I have made banana nut bread, I plan to make it more often because it is actually pretty easy. I want to try some other versions of the recipe too!  Here is the Banana Nut Bread recipe I used:

Ingredients:

  • 1 large ripe banana
  • 1/3 cup apple sauce
  • 2 eggs
  • 2/3 cup sugar
  • 1 3/4 cup flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup walnuts (chopped in small pieces)

Directions:

  1. In a medium bowl, mix flour, sugar, baking soda and baking powder.
  2. In a small bowl mash bananas and add applesauce and eggs. Once you are done mixing, add to dry ingredients.
  3. Pour mixture into greased loaf pan and bake at 350 degrees for 50 to 55 minutes.
  4. Enjoy

Quick Cinnamon Streusel Bread

Looking for a quick treat that your family will love? I cooked this yummy bread this morning and it was gone within an hour. I was even surprised that my 6 year old really liked it and wanted more …

Here goes the recipe for some Quick Cinnamon Streusel Bread…..

Ingredients:

  • 1 Box of  Betty Crocker Cinnabon Cinnamon Streusel Muffin (includes streusel topping)
  • 1/3 cup all-purpose flour
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 2 eggs

Directions:

  1. Preheat oven to 375 degrees
  2. In a bowl, add muffin mix, flour, water, oil and eggs until blended.
  3. Grease bottom of an 8×4-inch loaf pan and add batter
  4. Sprinkle top of batter with Cinnabon Streusel topping
  5. Bake 40 to 50 minutes. The top of bread should be golden brown. Test inside by inserting a toothpick to see if it comes out clean.
  6. Cool for 15 minutes. Once cooled take knife around edges of pan and remove bread.
  7. Enjoy!
